John Ford started Unearthed Co Mushrooms after years of wild edible mushroom foraging and then a turn into mushroom growing years later. From their farm in the Yarra Valley they grow a dozen varieties of mushrooms in climate-controlled shipping containers, powered by solar panels to keep cool in the Summer months with minimal power impact. The farm is run on tank water and all their waste substrate is composted on site or used by local wineries and farms.
